Squash flour and apple flour sunbutter cookies

  1. Preheat oven to 325 degrees

  2. Combine raw sugar, melted coconut oil, sunbutter, and egg in a large bowl.

  3. In a separate bowl, stir together apple flour, squash flour, baking powder, cardamom, and salt.

  4. Dissolve the baking soda with the almond milk in a separate bowl or cup and stir into the wet ingredients.

  5. Slowly add dry mixture to wet mixture and mix well. Stir for about one minute with a spatula.

  6. Add vanilla and chocolate chunks and stir until combined.

  7. Grease baking sheet or line with parchment paper. Drop cookies on by the spoonful. Bake at 325 for 9-12 minutes.
